EVOLVING THE CONCEPT
A client asked us to turn his fast-casual pizza and salad concept into a brand with real presence. After defining the demographic he wanted to attract, I researched the origins and cues of Neapolitan pizza, matching the chef’s craft to an identity that felt authentic, modern, and scalable. That work led us to the name Brera Pizza and Salad Company, and from there I built the brand system, starting with logo direction, typography, color, and tone. In parallel, I mapped the full guest journey, from the moment someone enters the door through ordering, dining, and exiting, so every touchpoint reinforced the same story. Working side-by-side with my business partner, an architect, we designed a complete, repeatable restaurant environment ready for rollout nationwide, including menu boards, feature walls, lighting, and the smallest details that make a space feel intentional.

DEVELOPMENT
With our internal team, builders, and city code officials, we coordinated every detail to bring the concept to life, keep it compliant, and delivered a space that matched the brand vision from day one.

PROBLEMS
One of the biggest challenges was balancing creativity with real-world constraints. We designed the space to meet ADA requirements without compromising the experience, and we stayed hands-on with contractors to ensure the build matched the vision down to the details. At the same time, we had to choose materials that looked elevated but stayed cost-effective, durable, and easy to source for repeat builds. Finally, we engineered the layout as a flexible kit of parts, so the design could scale and adapt to different footprints while still feeling consistent in every location.

Solutions
The solution was a fast-casual restaurant concept that felt equal parts unique and affordable, built with a repeatable design system and materials that were easy to source, durable, and consistent across locations. Brought to life in Dearborn at 1002 S Military St, the space was positioned as a modern, artisanal pizzeria experience with digital touchpoints that reinforced the brand from the moment guests walked in. The end result was a scalable prototype, including a streamlined order-to-dine flow and a consistent look and feel that could be replicated in new footprints without losing what made it special.
